An intriguing lot from Yirgacheffe, crafted through a meticulous processing method where every stage receives careful attention.
Only fully ripe, red cherries are carefully selected from the trees. The cherries then undergo a 72-hour fermentation, followed by washing with clean water and approximately 7 days of drying on raised beds. This slow and careful process allow the coffee to gradually develop its clarity, balance, and distinctive character.
