Ruby was originally developed by Ninety Plus in 2015, as a result of an unplanned processing experiment in Ethiopia. This coffee processing produced a large number of unusually red seeds. When tasting these seeds individually, they have an incredibly strong flavor of red wine and red berries that is hard to believe.
Jaisooksern Farm has mimicked the Ruby Process to create to truly unique experience.
